This study investigated the effects of chitosan-based foliar treatments on the phenolic profile of ‘Fetească Neagră’ grapes and the resulting wines. The application of chitosan in the vineyard led to a significant increase in total polyphenol content and antioxidant activity in both grapes and wines. Notably, there was an enhancement in specific phenolic compounds, including anthocyanins and tannins, which are crucial for color and mouthfeel in red wines. These findings suggest that chitosan treatments can be an effective strategy to improve the phenolic quality of ‘Fetească Neagră’ wines.
